The history of this place began in 1990, when it was known as Cascade Espresso. At that time, it was just a modest mobile coffee cart stationed near a local hardware store. However, as the drinks grew in popularity, the business soon found its first permanent location with a drive-thru window.

The unique name "Huxdotter" has deep Swedish roots. According to an old tradition, an unmarried woman would take her father's name and add the word dotter (daughter) to it. Thus, the name translates as "Hux's daughter", paying homage to the owners' family heritage.

A new stage of development began in 2016 when Jeremy Westlake became the owner. He dreamed of turning the small spot into a full-scale, spacious cafe. After several years of design and large-scale construction, the new flagship building, covering over 330 square meters, opened in August 2019, and today it delights guests with its stylish appearance and hospitality.
