At that time, the project was called Wines By Wednesday and was a tiny wine shop of only 65 square meters, tucked away in the corner of a large warehouse. Back then, the selection was limited to a couple of dozen wine varieties and a small choice of delicacies.

The turning point came in 2013 when the owners purchased the building on 5th Street South. Previously, it housed a sheet metal fabrication shop. A large-scale renovation allowed the old warehouse to be transformed into a stylish modern space while preserving the building's industrial charm.

In 2014, the renovated establishment opened its doors, significantly expanding its product range and wine list. Dining service was soon added to the shop, and by early 2015, 5th & Wine had evolved into a full-fledged restaurant with a dinner menu and a craft beer license. Since then, the establishment has never stopped experimenting, growing from a small hobby project into one of the city's main gastronomic destinations.
