Under his leadership, the restaurant saw a meteoric rise: it received its second Michelin star in 2005 and was awarded the highest honor of three Michelin stars in 2014. A major renovation in 2009–2010 gave the interiors a contemporary look with subtle Japanese accents.

Today, the establishment remains true to its family traditions: Arnaud manages it alongside his wife Magali and his sister Mélanie. In 2025, L’Assiette Champenoise will celebrate its 50th anniversary, remaining one of the most prestigious gastronomic addresses in the entire region.
